Jalapeno Popper Rolls

Andy is in four (count them, FOUR- quatro, quatre) NFL fantasy football leagues.  I could barely even manage to remember to make my picks in my college pick 'em last year, so how he manages four teams each fall, I will never know.  One is a work group of friends, one is his dad's buddies, one is college friends, and one is a group of his KA buddies from Midwestern State University.  This year, the KA boys' draft was at our friends, Clay and Michelle's, house.  I wanted to make something easy and bite sized for the draft party, so I turned to my Pinterest boards to see what I could find.

Andy loves to make Grilled Stuffed Jalapeno Peppers, but they are messy and were going to be hard to transport to Keller for the party.  Instead, I found a recipe for Jalapeno Popper Rolls, which are basically a self-contained, less messy, less gooey cousin of Grilled Stuffed Jalapeno Peppers.  I made them the morning of the draft party, cooked them for 10 minutes at my house, then reheated them at 350 again for 10 minutes once we got to Clay & Michelle's.  All of the attendees brought something different- from alfredo meatballs to Taco Bell tacos, and from McDonald's chicken nuggets to Fuzzy's chips & queso.

The popper rolls were a hit, so I also made them the next weekend.  The next weekend was the first TCU tailgate of the season, and Jalapeno Popper Rolls turned out to be super fast and easy when I prepared them in advance.  Basically I made them and baked them on a Friday, sealed them in a baggie and refridgerated them overnight, and was able to pop them in the oven on Saturday before heading to the tailgate to crisp them up.  I tripled the recipe for the TCU tailgate, and they were gone in about an hour... so it's safe to say they were a hit with NCAA fans as well as the NFL fans.

The tailgate was crazy-busy but a ton of fun.  In addition to my Jalapeno Popper Rolls, I took guacamole and Julio's chips.  Chris' mom brought the first Cinnamon Roll Cookie Bars that I'd ever tried, and I immediately fell in love with their rich, thick, sweetness- recipe to come soon when DeeDee sends it to me!  TCU made quite an entrance into the Big 12 with a 56-0 win over Grambling State, but I'm pretty sure it was the beer-drinking, snack-munching tailgaters that were the biggest winners that night.

Jalapeno Popper Rolls

Servings: 16; Weight Watchers Points Plus Value: 1



  • 1 can reduced-fat Pillsbury crescent roll dough
  • 2 tbsp fat-free cream cheese
  • 2 jalapenos, chopped and de-seeded
  • 3 strips center-cut bacon, baked and crumbled
  1. Preheat oven to 350
  2. Roll out your dough. It's perforated in triangles, but cut each triangle in half using a pizza cutter to make more "bite-sized" poppers.

     3.  Place a dollop of cream cheese on the wide end of the triangle shape
     4.  Sprinkle bacon and jalapenos atop the cream cheese


     5.  Roll the crescent rolls from wide end to skinny end
     6.  Pinch together the two ends so the stuffing doesn't ooze out


7.  Bake 15 mins

Birthday Cake Popcorn

My friends, Natalie and Thomas, who I have mentioned many times in previous blog entries, were expecting a baby girl, Charleigh Marie, on May 4, 2012.  I offered to help Natalie's sister, Lauren, throw a baby shower.  Lauren and Natalie's friend, Kara, had most of the shower covered, so she assigned me to party favors.  After seeing numerous cute baby shower posts on Pinterest for "_____ is about to pop!" pop-themed parties, we decided to go with that.  I had my friend, Michelle, make up some cute labels for both the party favors and the champagne bottles.  Michelle's labels for the champagne said, "Natalie is about to pop!" and the labels for the party favors said, "Thanks for popping by!"

I looked up recipes for creative popcorn, but I wasn't really pleased with any one in particular.  Again, in true Katherine in the Kitchen style, I took a recipe, and I made it my own.  "Birthday Cake Popcorn" was basically candied popcorn with an assortment of sprinkles mixed into it, but for Natalie's shower, I chose pink sprinkles for a baby girl.  The popcorn was sweet from the candy coating and salty and crunchy from the popcorn- one of those "M&M's and popcorn" or "fries dipped in milkshake" kind of tastes- you don't know why the contrasting flavors taste so good- they just do.

Natalie and Thomas' Benbrook home was beautifully decorated for the shower, complete with modern decor and delicious food.  Natalie chose to have her guests bring their gifts unopened, so we could all see each of the presents- from the itty bitty teeny weeny yellow polka dot bikini to the wreath I made with a large "C" for Charleigh.

I made this popcorn again for a staff meeting at work, but the meeting was cancelled due to inclement weather.  Good thing, too, because there was a grand total of seven tornadoes that touched down in the metroplex that night.  I am the Birthday Coordinator for the unit, so I was bringing the March birthday cards and birthday treats to the meeting.  I took my ginormous bag of Birthday Cake Popcorn to my Intake and Inpatient co-workers, despite the weather, because God knows that I didn't want to be hunkered down in "the room in the most central area of my house with no windows" with a hugmongous bag of sugary goodness. Everyone absolutely loved it! I was asked for the recipe by six people, and my co-worker, Meredith, even claimed to have dreamt about it the next night.  That may be the best compliment that I've ever gotten about my food!

Making this stuff is MESSY.  You get it all over your hands, but it's not like I was complaining to have to lick the candy coating off of my fingers (when I was done of course!)  Because the coating gets so thick, you can't really drizzle it on the popcorn, so you have to just stick your hands in it, pick up some of the popcorn, and toss the popcorn with the coating.  Despite being super easy, like I said it is super messy, but would definitely be fun to make with kiddos.

So instead of just zapping a bag of popcorn in the microwave next time and dumping in a bag of M&Ms, try Birthday Cake Popcorn.  Just making it is deliciously fun, and it's a yummy snack to take to any celebration!

Birthday Cake Popcorn
 
  • 3 bags un-buttered/un-salted popcorn
  • 1 c vanilla candy wafers (available at Michael’s/Hobby Lobby in the cake decorating section)
  • 1 c vanilla cake mix (just the powder- don’t mix up the mix)
  • Small sugar sprinkles


1.       Pop popcorn in the microwave & allow to cool
2.       Melt wafers (about 1 min in microwave)
3.       Add cake mix to melted wafers & stir
4.       Melt wafers/cake mix another 10 secs
5.       Toss wafers/cake mix mixture with popcorn so popcorn has the sticky mixture all over it
6.       Sprinkle on sprinkles (the smaller sugar sprinkles work/stick best)
7.       Allow to dry

Green Chili Fudge

The rodeo can be summed up in the words of Mr. Brooks:
Well it's bulls and blood, It's dust and mud, It's the roar of a Sunday crowd
It's the white in his knuckles, The gold in the buckle he'll win the next go 'round
It's boots and chaps, It's cowboy hats, It's spurs and latigo
It's the ropes and the reins, And the joy and the pain
And they call the thing rodeo.


Every January/February off Lancaster and University in Fort Worth, you will find my favorite event of the year.  The Fort Worth Stockshow and Rodeo.  And yes, this thing really is legendary.

I have gone to the rodeo every single year that I can remember.  The rodeo kicks off every year with the annual rodeo parade.  When I was reallllly little (before kindergarten), my dad's law office was across from the Chisolm Trail Mural downtown.  We would sit in the windows and watch the annual rodeo parade in our flannel shirts and take in the sweet smell of horse manure, and we knew that the rodeo was finally back in town.

Brief History:
I usually go to the rodeo with my friends or family.  For a couple of years, my friend, JK, and her mom, Mama Sheila, took me and some of our other friends to sit in their box.  We would get a day sheet (found in a $3 program!) and each placed bets on who we thought would rope the fastest or get the highest score on the wildest bull.  Usually, I just picked the guys with the cool names like "Denver" or the bulls with the meanest names like "Hot Damn" or "Loco."

Last year, my friend, Kate, took a group of us girls who have been friends for 19 years to sit in her dad's box.  A few weeks later, Kate sent out a mass text to see if anyone wanted to use the box because it was going to be empty for finals.  Um, yes, duh.  So I asked my cousin, Chris, and his wife, Tiffany, and their daughter, Kameron, to come.  Chris, Tiff, and I were all pretty close in age, but we never really hung out together outside of family stuff.  I'm really glad they said they could come, and I had no idea it would be the first and last time for us all three to hang out.  We lost Chris last March in a motorcycle accident, and it was a blessing that Kate offered up her seats this night. 

Back to 2011:
This year I am completing my provisional year in the Junior League of Fort Worth.  Your provisional year is kind of like a pledge year in a sorority.  You have to go to your own provisional class meetings each month and also the general membership meetings, complete a few shifts at each Junior League event (Mayfest, rodeo, etc), and work 50 hours at the Junior League resale shop, Double Exposure.  I was pretttty excited about the rodeo shifts because, obviously, I love the rodeo.  It is the duty of the Junior League ladies to "yell and sell."  It goes about like this, "Rodeo programs, $3! Get your programs. Ice cold programs.  Special today, only $3 (they're always $3)!  How bout them cowboys? Read all about 'em in your rodeo program!  Help out your local charities! Put your money towards a good cause! The cheapest souvenir you can buy! Half the price of a beer, and it'll last you allllll night!"  I worked 6 shifts- I had it down.

One day, Groupon, a group coupon website which is amazing and everyone should subscribe to, offered half priced tickets to go to the rodeo.  Since I'd been yelling and selling, I hadn't seen much of the actual show, so I thought it'd be fun to go.  I bought four tickets and was super stoked... then I realized I'd purchased 4 10:00am on a SATURDAY tickets.  Oops.  Looks like we were just gonna have to make a day of it!

Next door to and outside of the rodeo is the midway.  No, not the carnival, the midway.  The midway is home to dozens of scary rides, big beers, corn dogs, and FUNNEL CAKES.  I have a weird, crazy love for funnel cakes.  Actually, for almost all fair food (except corn dogs... I hate corn dogs).

In addition to the midway and the rodeo, there is an entire exhibit hall set up with row after row of clothes, agricultural products, and... food.  Score.  I am such a sucker, let it be said.  I sampled everything and definitely fell for the shtick.  The "shtick" went about like this, "Hey pretty lady, salsa- buy 2, get one free. Buy FOUR, get two free... soup mixes? Buy two get one free."  After a while, I became a bobble-head, nodding to every offer and passing over my plastic.  I think we left the rodeo with 4 salsas, 3 dip mixes, and 4 soups from three different companies.  Oh, well, they'll be used eventually.

One salsa I bought, a super spicy green tomatillo salsa, had a recipe for Green Chili Fudge, so I made it this past weekend for the Super Bowl party.  It isn't fudge as in chocolate fudge, but it is called that because of its consistency.  It was just as amazing when I made it as it was when I was suckered into buying it!  I used the green salsa from the rodeo, but you really can use any jar of green salsa- the spicier the better.  Green chili fudge is a great chip topper, and can be semi-healthy if you use fat free cheese.

Green Chili Fudge
  • 4 c. grated cheese (I used a mixture of 1 c Four Cheese Mexican Blend & 3 c Fat Free Cheddar)
  • 1 jar green tomatillo salsa
  • 3 eggs
  • 1 pan (smaller pans work best, 9 x 9)
  1. Preheat oven to 350
  2. Beat eggs together
  3. Spread 2 c grated cheese in pan
  4. Combine eggs and 1/2 - 3/4 (you can approximate this) jar of salsa on cheese in pan
  5. Spread the second 1/2 of cheese (another 2 c) on top
  6. Bake at 350 for 30 mins
  7. Slice into squares, serve on tortilla chips
