Black Bean & Corn Side

Looking for a super easy, super healthy side for your Mexican dishes? (Such as Mexican Lime Chicken- click here!)  Here's a simple recipe that you can throw together.  Since the three main ingredients are canned foods, you can keep them in your cupboard so you don't have to run to the store last minute.  The black beans are chocked full of fiber, protein, and are practically fat-free.  Corn is a low-fat complex carbohydrate, high in fiber, folic acid, and vitamin C.  Lastly, tomatoes have lycopene, a vital antioxidant, vitamin C, vitamin A, and potassium.  Enjoy!

Servings: 2, Weight Watchers PointsPlus Value: 7 (these are heaping servings- it could easily feed 4)



  • 1 can back beans, drained
  • 1 can sweet kernel corn, no salt added, drained
  • 1 can diced tomatoes with green chilies, drained
  • Splash of lime juice
  1. Pour all beans, corn, tomatoes into a pot- add splash of lime
  2. Mix together
  3. Warm on stovetop until hot, stirring occasionally
